Slow Cooker Honey Lime Pork
4 lb. pork loin
2 tablespoons oil
½ cup honey
3 tablespoons soy sauce
1 ½ tablespoons Worcestershire sauce
3 cloves garlic, minced
2 limes, zested and juiced
2 tablespoons cornstarch (use later in recipe)
¼ teaspoon cayenne pepper
¼ teaspoon ground ginger
Salt & pepper, to taste
Season pork loin generously with salt and pepper, then heat oil in a large skillet over medium-high heat. Sear pork loin until nicely browned.
Combine honey, soy sauce, Worcestershire sauce, garlic, lime juice and zest, cayenne peper and ground ginger in a small bowl, and whisk together.
Transfer pork loin to a large slow cooker, then pour marinade over the top. Cover slow cooker and cook on low 6-8 hours, or on high 3-4 hours, or until pork is tender.
Once pork is cooked through, pour marinade/juices from slow cooker into a small saucepan and place over medium-high heat. Combine cornstarch with 3 tablespoons of water in a small bowl and whisk. Pour cornstarch into marinade/juices and bring to a boil. Reduce heat and cook for 10-12 minutes, or until mixture starts to thicken. Pour over pork, then serve hot.
