Slow Cooker Carne Asada 

3-4 lbs. Beef Tri-Tip Steak (or skirt steak)

2 tsp. smoked paprika

2 tsp. cumin

2 tsp. chili powder

1 tsp. salt

1 tsp. pepper

2 tsp. onion powder

2 tsp. garlic powder

2 tsp. dried oregano

1/3 cup Olive oil

½ cup orange juice

½ cup lime juice

½ cup lemon juice

½ cup soy sauce (can use low sodium)

4 tbsp. white vinegar 

In a small bowl, whisk together spices, then stir in the olive oil.  Rub half the spice mixture over one side of the Tri-tip, flip over and rub that side of the meat.  Whisk together orange juice, lime juice, lemon juice, soy sauce and vinegar.  Spray a large slow cooker with cooking spray.  Pour in half of the juice mixture.  Add the beef to the slow cooker and pour the rest of the juice mixture over the top.  Cover and cook on low for 6 hours.  Once cooked, remove the meat and let rest 10 minutes.  Thinly slice meat against the grain, or shred with two forks.  Place sliced or shredded meat back into slow cooker and mix.  Cook 30 minutes on low.  Serve with flour tortillas, pico de gallo, avocado, etc.
