Slow Cooker Beef Brisket

Slow Cooker Beef Brisket 

For brisket:

6-7 lb. Beef brisket (flat)

2 tablespoons Olive oil

2 tablespoon balsamic vinegar

1 tablespoon liquid smoke

Homemade beef brisket rub

 

For homemade rub:

¼ cup light brown sugar

1 ½ teaspoon kosher salt

1 tablespoon garlic powder

1 tablespoon onion powder

1 tablespoon paprika or 1 ½ teaspoons smoked paprika

1 teaspoon black pepper

1 teaspoon cayenne pepper

1 tablespoon parsley flakes

(mix in a bowl and use all) 

Combine olive oil, vinegar, liquid smoke and homemade brisket rub in a medium bowl.  Rub mixture over both sides of brisket.  

Spray a large slow cooker with cooking spray.  Place brisket in the slow cooker, fat side up.  Turn on low and cook for 9-10 hours.  Once done, carefully remove brisket and place on a foil lined baking sheet.  Turn your oven on broil, high, then place the brisket in the oven.  Let it stay in there long enough until the “bark” darkens (the outside layer of fat).  Once done, remove the brisket out of the oven, and wrap in foil.  Let it rest 1 hour.  Then, slice and enjoy!
