Slow Cooker Balsamic Chicken
1 tablespoon vegetable or olive oil
4 cloves garlic, finely chopped
1 lb. bag baby carrots
8 boneless, skinless chicken thighs
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon dried basil
½ cup balsamic vinegar
1 onion, sliced
1 pound green beans
Dried Parsley to garnish
Pour oil in the bottom of a large slow cooker and add the garlic and baby carrots, then place the chicken thighs on top before seasoning with salt, pepper, garlic powder, basil and vinegar.
Place the onions on top of the chicken and seasoning and set to cook for 8 hours on low, or 4 hours on high, adding the green beans for the last 30 minutes of the cooking time, before sprinkling with the dried parsley.
Serve with mashed, steamed or baked potatoes.
