Seafood Fettuccine Alfredo

Seafood Fettuccine Alfredo (serves 4) 

2 tablespoon olive oil

1 lb. bag frozen cooked shrimp, peeled and deveined, thawed

1 package imitation crab meat

3-4 oz. salmon filets, thawed, and chopped into pieces

3 cloves garlic, minced

1 14 oz. can chicken broth

4 tablespoons butter

1 ¼ cup heavy whipping cream

8 oz. uncooked fettuccine pasta

½ cup grated parmesan cheese

Salt and pepper to taste

Dried parsley for garnish 

In a large stock pot, over medium-high heat, heat the olive oil.  Add garlic and  cook 1 minute.  Add chicken broth, heavy cream, butter, crab and salmon pieces and uncooked pasta to pan and stir until mixture boils.  Cover and reduce heat to a simmer.  Simmer for 15-20 minutes, or until pasta is tender, stirring occasionally.  Stir in parmesan cheese.  Add shrimp and cook 8-10 minutes.  Season with salt and pepper as needed.  Sprinkle with dried parsley and serve.
