Seafood Enchilada’s

Seafood Enchiladas

2 lbs. Imitation Crab

2 cups shredded Pepper Jack cheese/or Mexican blend cheese

2 large cans Red enchilada sauce

12 flour tortillas

2 cups sour cream

2 teaspoons butter

1 small onion, diced small

½ teaspoon Cilantro

Hot sauce, to taste

Salt & Pepper, to taste 

Preheat oven to 350-degrees and spray two 9 x 13” baking dishes with cooking spray.  

Melt butter in a large skillet over medium heat.  Add onion, crab meat, couple dash hot sauce (optional), salt and pepper and sauté until onions are clear.  Add cilantro, sour cream and 1 cup cheese.  Blend and reduce heat to low.  Add a few dashes of hot sauce, to taste and mix.  Place about 1/2 cup crab meat filling down the center of each tortilla, then fold in the sides and roll up.  Place seam side down in the baking dish, about 6 per baking dish.  Repeat until all tortillas are filled.  Now, pour red enchilada sauce over the center of the tortillas and top with remaining cup of cheese.  

Bake 25-30 minutes.  Serve topped with sour cream.
