Poached Cod in Tomato Basil Sauce 

8-10 frozen cod filets

1 28 oz. can diced tomatoes

3 cloves garlic, minced

1 ½ cups chicken stock

1 teaspoon salt

1 teaspoon pepper

½ cup fresh basil leaves, finely chopped, plus more for garnish (optional) 

Place the tomatoes, garlic, salt and pepper in a large pot over medium heat; cook and stir 6-7 minutes.   Add the chicken stock, frozen cod filets and chopped basil.  Cover and simmer for 20-25 minutes, until the fish is fully cooked.  When ready to serve, sprinkle with some additional chopped basil and serve over a bed or rice, if desired.
