Philly Cheese Steak Sloppy Joes
2 teaspoons cornstarch
1 cup chicken stock or broth
1 tablespoon olive oil
1 medium onion, diced
2 green bell peppers, diced
2 lbs. lean ground beef
4 tablespoons ketchup
4 tablespoons Worcestershire sauce
4 teaspoons Taco seasoning
½ teaspoon salt
½ teaspoon pepper
2 cups shredded provolone, Colby/Jack or mozzarella cheese
12 hamburger buns
In a small bowl, whisk together the cornstarch and chicken stock. Set aside.
Heat the oil in a large skillet over medium-high heat. Add the onion and peppers; sauté until tender, about 5 minutes. Add in the ground beef and continue to cook, breaking up the meat and browning. Drain off excess fat.
Stir in the ketchup, Worcestershire, taco seasoning, salt and pepper. Give the cornstarch mixture a stir and add it to the skillet; simmer 3 minutes, stirring occasionally, until mixture thickens slightly, then stir in shredded cheese until melted. Scoop some mixture onto buns and serve.
