North Carolina Pulled Chicken Sandwiches

 1 cup apple cider vinegar

¼ cup brown sugar

1 tablespoon kosher salt

1 tablespoon hot sauce

½ teaspoon black pepper

3 lbs. boneless, skinless chicken breasts and chicken thighs

Buns for serving

Coleslaw for garnish (optional)

Additional hot sauce for garnish (optional) 

In a 4-5 quart slow cooker, add vinegar, brown sugar, salt, hot sauce, and black pepper.  Stir well, then add chicken.  Cook on low 6-7 hours.  Just before serving, remove chicken from slow cooker and shred using two forks and return meat to slow cooker, and stir.  Serve on buns, (topped with coleslaw, if using).
