New York Strip Steak

Michael Kaye’s 2-2-4-4 Grilling method for a perfectly cooked medium-rare steak.  

Works on any type of steak.  Just make sure all the steaks are cut the same thickness.  

Heat one side of your grill to 450-degrees F.  Leave the other burners on the other side of the grill off.  Season your steaks with a little kosher salt and course ground black pepper.  Add steaks to the HOT side of the grill.  Close the cover and grill 2 minutes, open the cover, flip steaks and cook another 2 minutes.  There’s your 2-2.  Now, move the steaks to the COOL side of the grill and cover.  Adjust your temperature to 350-degrees F.  Grill for 4 minutes, open the cover, flip the steaks, and grill another 4 minutes.  There’s your 4-4 part of the equation.  Remove steaks to a plate or pan, and let rest 5 minutes, then serve. 

Another note, do NOT open the grill lid while steaks are cooking, or, you’ll loose heat, and, will through off the grill time. Yes, you can open the lid to flip the steaks of course, just do it as quickly as you can so you don’t loose too much heat.
