Meatball Subs Sliders
1 lb. ground beef
1 lb. Italian sausage
3 cloves garlic, minced
1/3 cup fresh parsley, chopped (or 1 tablespoon dried parsley)
1/3 cup grated Parmesan cheese
1 teaspoons salt
½ teaspoon pepper
1 ¼ cup Italian bread crumbs
2 eggs, beaten
¾ cup milk
1 tablespoon oil
1 pkg. Jr. Buns or Jr. Vienna buns (12 buns)
2 cups marinara sauce (or spaghetti sauce)
2 cups mozzarella cheese, shredded
2 tablespoons Olive oil
3 tablespoons grated Parmesan cheese
1 tablespoon Italian seasoning
Preheat oven to 400-degrees F.
In a large bowl, combine ground beef, Italian sausage, garlic, parsley, 1/3 cup Parmesan cheese, salt, pepper, bread crumbs, eggs, and milk. Mix until thoroughly combine.
Roll the mixture into 1 ½-2” diameter meatballs. Place meatballs on a foil or parchment lined baking sheet, and bake for 20-25 minutes. Remove from oven and let rest. Lower oven temperature to 350-degrees F.
Place bottoms of bun face-up on a baking sheet and bake in 350-degree oven for about 4-5 minutes, just until bread is a bit toasted. Remove from oven and let cool a few minutes. Spray a 9 x 13-inch baking dish with cooking spray. Place bottoms of buns in bottom of baking dish. Spoon a little marinara sauce on each bottom bun. Top with one meatball per bun. Top with a little more marinara sauce, then top with shredded mozzarella cheese.
Place the tops on each sandwich. Lightly brush the tops with olive oil. Combine 3 tablespoons Parmesan cheese with 1 tablespoons Italian seasoning and sprinkle over the tops of each sandwich.
Bake in oven for 15 minutes. Remove and enjoy!
