Juicy Lucy Burgers (yields 6 burgers)
3 lbs. ground beef (85%)
6 slices American cheese
3 tablespoons Worcestershire sauce
6 burger buns, split, buttered and toasted
Your favorite burger toppings, ketchup, mayo, lettuce, pickles, etc.
Homemade burger seasoning (recipe follows)
Divide meat into 12 equal portions (about 4 oz. each) and form each into a ball.
Place each patty between two pieces of wax paper, and flatten thin, using the bottom of skillet, until they are about ¼” thick. Transfer to a baking sheet.
Cut each slice of American cheese into four equal squares. Stack the squares on top of each other and place in the middle of one patty. Top with a second patty and seal edges. Drizzle some of the Worcestershire over the top of each patty and spread around. Sprinkle the top of each burger with some homemade burger seasoning.
Heat a griddle, or large cast iron skillet, over medium-high heat (about 425-degrees). Place burgers, seasoned side down on griddle, and, season the top or each burger patty with a little more Worcestershire sauce and then some of the homemade seasoning. Place on griddle and cook about 8-10 minutes, then flip, and cook an additional 5-7 minutes. Remove burgers from griddle and let rest.
While burgers are cooling, brush inside of buns with melted butter or margarine and place open side down on griddle. Toast about 5 minutes. Remove to a plate. Place a burger on each bun, and, top with your favorite burger toppings, or, enjoy as is!
