Hash Brown Chicken Casserole
1-2lb. bag frozen Southern Style or diced hash browns
2 cups shredded cheddar cheese
½ teaspoon salt
½ teaspoon pepper
½ cup sweet corn
1 can cream of chicken soup
1 cup sour cream
1/3 cup milk
3 cups cooked, shredded chicken
Heat oven to 400-degrees F. Spray a 9 x 13-inch baking dish with cooking spray. Place potatoes in bottom of baking dish and spread out evenly.
In a large bowl, mix together the remaining ingredients, except bread crumbs. Layer the mixture over the potatoes. Sprinkle bread crumbs over top. Bake 1 hour or until top is golden brown. Remove from oven and let rest 5 minutes. Serve.
