Ham, Egg, Cheese & Tater Tot Breakfast casserole

2 cups diced cooked ham
1 (30-32 oz.) bag frozen tater tots
1 teaspoon salt
½ teaspoon pepper
¼ teaspoon garlic powder
¼ teaspoon onion powder
2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
10 eggs
2 cups milk

Preheat oven to 350-degrees.

Mix together tater tots, ham and cheeses in a bowl. Spray a 9 x 13-inch baking dish with cooking spray. Add tater tot mixture to baking dish and spread out evenly.

Whisk together eggs, milk and seasonings. Pour over tater tot mixture.

If cooking immediately, place baking dish in oven and bake for 40-50 minutes, or until eggs area set. Remove from oven and let rest 10 minutes. Cut and serve.

If you’re making the casserole ahead of time, cover with plastic wrap and refrigerate. Remove from refrigerator 1 hour before baking.
