Ham, Chicken and Cheddar Roll-ups
8 boneless, skinless chicken breasts
8 slices deli ham
2 cups shredded cheddar cheese
3 eggs, beaten
½ cup all-purpose flour
1 ½ teaspoons garlic powder
1 ½ teaspoons salt
1 ½ teaspoons pepper
1 ½ cups dried bread crumbs
Preheat oven to 350-degrees F. Between two pieces of plastic wrap, pound chicken breast until they are ½-inch thick. Top each chicken breast with 1 slice of ham and some of the cheddar cheese. Roll it up and secure with toothpicks on either side.
In a bowl, combine flour, garlic powder, salt and pepper. Dredge chicken in flour mixture, then beaten eggs, then breadcrumbs.
Place in a greased baking dish. Bake for 30-35 minutes. Remove from oven and allow to rest for about 5 minutes. Serve.
