Ham, bacon, egg and cheese Breakfast Burritos
3 cups frozen hash browns, cooked according to package directions
8-10 slices bacon, cook crisp and crumbled
12 large eggs, lightly beaten
¼ cup whole milk
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon paprika
10-12 flour tortillas
1 cup cubed ham
2 cups shredded cheddar cheese, shredded
1 cup Colby/Jack cheese, shredded
In a large mixing bowl, whisk together eggs, milk, salt, pepper, and paprika.
Place a large skillet, over medium-low heat. Add a drizzle of olive oil or tablespoon butter. Add the egg mixture and scramble until fully set, about 5-7 minutes; set aside.
Top tortillas with some potatoes, bacon, eggs, ham and cheese. Roll them up, and place in a 9 x 13” baking dish that has been sprayed with cooking spray. Preheat oven to 400-degrees F. Bake 20-30 minutes. Serve.
