Ground Brisket Meatloaf
2 lbs. ground brisket
½ cup onion, diced
1 cup Italian style bread crumbs
½ cup milk
1 large egg
2 tablespoons Worcestershire sauce
1 teaspoon salt
1 teaspoon basil
1 teaspoon oregano
½ teaspoon pepper
½ teaspoon crushed red pepper flakes or cayenne pepper (optional)
¾ cup ketchup
3 tablespoons brown sugar
1 ½ tablespoons Worcestershire sauce
Preheat oven to 350-degrees F. Lightly spray a 9 x 13” baking dish with cooking spray.
In a large bowl, knead together the ground brisket, onion, bread crumbs, milk, egg, Worcestershire sauce, salt, basil, oregano, pepper, and red pepper flakes or cayenne pepper. Mix well (don’t over mix!) and shape into a loaf and put it into the prepared baking dish. Bake at 350-degrees for 45 minutes.
Mix up the glaze in a small bowl by whisking together the ketchup, brown sugar, and Worcestershire sauce. Brush it over the hot meatloaf.
Increase oven temperature to 400-degrees F and bake an additional 15-25 minutes, or until the meatloaf reaches an internal temperature of 160-degrees F.
Remove from oven, let rest 5 minutes and serve.
