Grilled Iowa Chops

Grilled Iowa Chops 

Pork:

4-6 bone-in Iowa chops, at least 1” thick 

Marinade:

¼ cup lemon juice

1 tablespoon minced garlic

¼ cup balsamic vinegar

¼ cup soy sauce

¼ cup Worcestershire sauce

1/3 cup brown sugar

2 teaspoons Italian seasoning

1 tablespoon Dijon mustard

2 teaspoon kosher salt

1 teaspoon pepper 

Mix all of the marinade ingredients in a large bowl.  Add pork chops and turn to coat.  Refrigerate at least 1 hour, or up to 12 hours.  When ready to grill, remove chops from the refrigerator about 30 minutes before placing on the grill.

Set up your grill for indirect cooking (turn burners on one side of the grill only).  Spray grill grate with cooking spray.  Lay chops down on hot side of grill, and sear for 2 minutes per side.  Move chops to the cool side of the grill and stand  up, wide bone side down.  Grill at 350-degrees F for 20-25 minutes, or, until an instant read thermometer reaches 135-degrees F.  Remove from grill, cover with foil, and let rest 5 minutes.  Serve.
