Grilled Chicken Mac ‘N Cheese casserole
3 cups frozen chicken fajita strips, thawed, chopped
1 bag Gourmet Man ‘N Cheese
¾ cup Chez-It crackers, crushed
Thaw about 2 pounds of the frozen chicken fajita strips from the 5 pound bag. Once thawed, chop into bite size pieces. Set aside.
When ready to bake, preheat oven to 350-degrees F. Spray a 9 x 13-inch baking dish with cooking spray. Pour contents of bagged Mac ‘N cheese into a large bowl. Add chicken and stir. Pour mixture into baking dish. Smooth out mixture. Cover with aluminum foil. Bake 25-30 minutes. Remove from oven and uncover. Return to oven and bake an additional 15-20 minutes, or until a bit bubbly. Remove from oven and top with crushed Chez-it crackers. Return to oven and bake an additional 5-8 minutes. Remove from oven, let rest 5-10 (the longer it rests, the thicker it gets!) minutes and serve!
