Grilled Chicken Bacon Sliders
10-12 frozen, grill marked chicken breasts
8-10 slices bacon
Salt and pepper, to taste
10-12 Jr. buns
6-8- slices cheese (each cut in half) (cheddar, Colby/Jack, Pepper Jack, American or Swiss)
Mayo, Mustard, Dijon Mustard, etc. (optional)
Cook bacon until it’s just a bit crispy. Remove to a paper towel and drain. Reserve some of the bacon grease. When cool, cut each piece in half. Save the bacon grease!
Heat grill to medium heat. Brush both sides of each frozen chicken breast with some of the bacon grease, then season with some Cajun spice, salt and pepper.
Cook chicken breasts about 5 minutes, then turn them over, brush with a little more bacon grease and grill an additional 5 minutes, or until chicken is cooked and heated through. Drizzle each breast with BBQ sauce, then top with a layer of cheese. Continue cooking until the cheese has melted and remove from grill.
Spread both sides of buns with the spread of your choice, if using (mayo, mustard, etc.). Top each bun with a chicken breast and serve.
