Garlic Herb Crusted Rump Roast 

3-4 lbs. beef rump roast

4 cloves garlic, minced

1 ½ tablespoons oil

2 teaspoons salt

1 teaspoon pepper

1 tablespoon dried thyme

1 tablespoon dried basil

1 tablespoon dried sage

1 tablespoon dried parsley

1 teaspoon dried rosemary 

Combine garlic, oil, salt, pepper, thyme, basil sage, rosemary and parsley in bowl.  Mix well.  Rub the mixture over all sides of the beef roast. 

Preheat oven to 300-degrees F.  Place the roast on a rack in a large roasting pan. Roast for 1 ¼-1 ¾ hours, or until meat thermometer inserted into thickest part of roast reaches 125-degrees F for medium rare or 135-degrees for medium well.  Remove the roast from the oven and place on a cutting board and let rest 15 minutes.  Slice and serve with your favorites vegetables.
