Father Andy’s Smoked & Grilled Chicken Drumsticks

Fr. Andy’s State Fair Smoked Chicken Legs
5 lbs of Chicken Legs
8 Cups of Warm Water
½ Cup of Kosher Salt
½ Cup of Brown Sugar
2 tablespoons of garlic powder
2 tablespoons of onion powder
1 tablespoon of black pepper
1. Mix all ingredients into brine. Inject each leg with a full injection and pour all of the brine onto the legs for about 6 hours.
2. Smoke the legs at 250 degrees until the internal temp reaches 175 degrees.
3. If a crispy finish is desired, finish legs on hot grill until skin has reached desired crisp.

Corky’s Cookout Seasoning
1. Rub chicken legs with seasoning.
2. Smoke the legs at 250 degrees until the internal temp reaches 175 degrees.
3. If a crispy finish is desired, finish legs on hot grill until skin has reached desired crisp.
