Pineapple, Apricot & Ginger Ham Glaze
1 cup crushed pineapple in juice
1 cup apricot preserves
2 tablespoons minced fresh ginger
1 shot rum
Mix ingredients together in a medium saucepan over medium heat. Bring to a boil. Transfer to a blender and blend until smooth. Season to taste with salt. Let cool to room temperature and serve.
For Ham:
Remove ham from packaging. Place cut flat side down in a roasting pan with edges 2-3”. Add 1 cup water to the bottom of the roasting pan. Cover tightly with foil. Place in preheated 325-degree F oven. Bake for 15 minutes per pound. Remove from oven, remove foil and let rest about 5 minutes. Slice and serve with glaze on the side.
