Dirty Rice & Beans

Dirty Rice & Beans


2 tablespoons oil

1 large yellow onion, diced

4 cloves garlic, minced

4 Polish sausages, cut into small chunks

2 teaspoon Cajun seasoning

2 teaspoons smoked paprika

½ teaspoon chili powder

½ teaspoon red pepper flakes (optional)

3 cups chicken broth

2 (14.5 oz.) cans diced tomatoes, undrained

2 cups long grain white rice (uncooked)

2 (15.5 oz.) cans light or dark red kidney beans, drained 

In a large stock pot, heat oil over medium heat.  Sauté onions for 4-5 minutes, stirring often, then add garlic, cook and stir for 1-2 minutes.  Now add the diced sausage and stir.   Sprinkle in all the seasonings and spices.  Stir.  Add uncooked rice and stir.  Pour in the chicken broth and tomatoes, and scrape up any browned bits from the bottom of the pot.  Turn the heat up to medium-high and bring the liquid to a simmer.  Let simmer 1-2 minutes.  Turn heat to low and top pot with a lid.  Cook for 15-18 minutes, stirring occasionally.   Remove pot from the burner and let sit, with the lid on, for about 5 minutes.  Stir the beans into the mixture, let rest a minute or two and serve.   

(For the homemade Cajun Seasoning):

2 teaspoons kosher salt

2 teaspoons garlic powder

2 ½ teaspoons paprika

1 teaspoon ground black pepper

1 teaspoon onion powder

1 teaspoon cayenne pepper

1 ¼ teaspoons dried oregano

1 ¼ teaspoons dried thyme

½ teaspoon red pepper flakes (optional)


Stir together all spices until evenly blended.  Store in an airtight container.
