Slow Cooker Chicken Bacon Ranch Sandwiches
3 lbs. boneless skinless chicken breasts
2 8oz. pkgs. Cream cheese (softened)
2 pkgs. Dry ranch dressing mix
2 lb. bacon, cooked crisp and crumbled
1 cup chicken broth
2 ½ cups shredded Colby/Jack cheese
Rolls or buns for serving
Lightly spray your slow cooker with cooking spray. Place the chicken in the slow cooker. Add cream cheese and ranch dressing mix. Cover and cook on low 3-4 hours. Remove chicken from slow cooker and shred. Whisk in the chicken broth with the cream cheese/ranch mixture and stir until smooth. Return shredded chicken to slow cooker. Cover and cook an additional 1 hour, then, add crumbled bacon and stir. Heat an additional 30 minutes or until warm.
Serve on buns, topped with shredded Colby/Jack cheese.
