Crispy Oven Baked Pork Chops


8 bone-in pork chops (cut 1” thick)

2 cups crushed corn flakes

1 cup Italian seasoned bread crumbs

1 tablespoon Italian seasoning

1 teaspoon paprika

½ teaspoon salt

½ teaspoon pepper

1 teaspoon chili powder

1 teaspoon garlic powder

1 teaspoon sugar

4 tablespoons Olive oil 

For Brine:

3 cups cold water, 2 tablespoons salt, 2 cloves smashed garlic, 1 teaspoon pepper, and 1 teaspoon sugar.  Add water to a large container.  Mix in salt, garlic, pepper and sugar and stir well.  Add chops to mixture, cover and refrigerate at least 6 hours.  

When ready to bake, preheat oven to 425-degrees F.  Remove chops from brine, rinse and dry with paper towels.  In a large pie pan, add all ingredients, except pork chops and mix well.  Add 1 pork chop at a time to mixture and coat the pork chops well with the breading.  Add chops to a foil or parchment paper lined baking sheet.  Bake in preheated oven for 20 minutes.  Turn the chops and continue baking for another 20 minutes.  Remove, let rest 5 minutes, serve.
