The Cremer’s Holiday Combination Roast
1 3-4 lb. Cremer’s Holiday Combination Roast
1 pkg. Cremer’s Rub Me Tender dry rub
Season roast with Cremer’s Rub Me Tender rub, refrigerate for at least 8 hours, or overnight.
Preheat oven to 425-degree F. Insert meat thermometer into roast, making sure to pierce both the pork loin and beef tenderloin with the thermometer. Place roast in roasting pan or cookie sheet. Cook for 30 minutes, or until a temperature of 130-degrees F is reached for medium rare doneness. (Add 10 additional minutes for medium well). Remove roast from oven, and tent with foil, and let rest for 40-50 minutes. (Internal temperature my increase 5-10 degrees while resting).
Slice roast. End pieces will be more done and center of roast more rare. Serve.
