Classic Reuben Sandwich

Classic Reuben Sandwich 

For the Sandwich:

8 slices rye bread

4 tablespoons butter, softened

¼ cup Russian dressing (homemade recipe follows)

8 slices Swiss cheese

1 lb. corned beef, sliced thin

1 cup sauerkraut, well drained

 

For the Russian dressing:

½ cup mayonnaise

3 tablespoons ketchup

2 tablespoon prepared horseradish

2 teaspoons Worcestershire sauce

2 dashes hot sauce

1 tablespoon granulated sugar

¼ teaspoon paprika

Kosher salt

Black pepper 

For the dressing:  In a medium bowl, whisk together mayonnaise, ketchup, prepared horseradish, Worcestershire, hot sauce, sugar, and paprika until combined.  Season with salt and pepper. 

Butter one side of each slice of bread.  On the non-butter side, spread Russian dressing on each slice.  Top half of the slices with Swiss cheese, corned beef, and sauerkraut.  Top each sandwich with remaining slices of Swiss cheese, then top with bread, dressing side down. 

Heat a medium skillet over medium heat.  Place the sandwich in the skillet and cook until golden and cheese is melted, about 3-4 minutes per side.
