Chicken & Waffle Casserole
10 toaster waffles
Frozen breaded chicken tenders
8 large eggs
¾ cup milk
¼ cup maple syrup, plus more for drizzling
2 tablespoons butter, melted
Freshly ground black pepper
Preheat oven to 400-degrees F. Place waffles on a large baking sheet. Bake until golden and crispy, about 15 minutes. Set aside. Add chicken tenders to baking sheet and bake 30-35 minutes. Remove and let cool a few minutes. Cut both waffles and chicken into pieces.
In a large bowl, whisk together eggs, milk, maple syrup, and melted butter. Season with salt and pepper.
Reduce oven to 350-degrees F. Lightly coat a 9 x 13-inch baking dish with cooking spray. Layer baking dish with waffles and breaded chicken, then pour egg mixture on top, covering completely. Bake until golden and set, about 45-50 minutes. Remove from oven and serve with warmed maple syrup.
