Chicken Parmesan Casserole

Chicken Parmesan Casserole

6 boneless, skinless chicken breasts, diced (or use ½ boneless, skinless chicken breasts and ½ boneless skinless chicken thighs)

1 cup mayonnaise or plain Greek yogurt

1 cup shredded (not grated) Parmesan cheese

1 teaspoon seasoned salt

½ teaspoon pepper

1 teaspoon garlic powder

1 lb. spaghetti or linguine, cooked according to package directions 

Preheat oven to 375-degrees F.

 Coat a 9 x 13-inch baking dish with cooking spray.  Place diced chicken in baking dish and arrange evenly.  

In a small bowl, combine the mayo or yogurt, ¾ cup Parmesan cheese, salt, pepper, and garlic powder.  Spread mixture evenly over chicken.  Sprinkle with remaining ¼ cup Parmesan cheese on top of chicken. 

Bake for 35-40 minutes.  Sever over cooked spaghetti or linguine.  (A side salad and garlic bread round out the meal!)
