Canadian Bacon McMuffin Casserole
1 (12 oz.) pkg. English muffins, split and cut into 1-inch pieces (6 cups)
12 slices of Canadian bacon, coarsely chopped (about 1 ½ cups)
2 cups shredded Cheddar Cheese
2 cups milk
½ teaspoon salt
½ teaspoon pepper
¼ cup butter or margarine (melted)
Maple syrup (optional)
Spray a 9 x 13-inch baking dish with cooking spray. Spread half of the English muffins in the bottom of dish; add half the Canadian bacon and half the cheese and spread out into an even layer; top with the remaining English Muffins and the remaining cheese.
Whisk together the eggs, milk, salt and pepper in a medium bowl until well combined. Pour the egg mixture evenly over the casserole. Cover with plastic wrap and refrigerate at least 1 hour, up to overnight.
Remove casserole from the refrigerator about 30 minutes before baking. Heat oven to 350-degress F. Uncover casserole and drizzle with melted butter or margarine. Bake 35-45 minutes, or until golden brown and knife inserted in center comes out clean. Let stand 15 minutes before slicing and serving. Drizzle each slice with a little real maple syrup, if desired.
