Broccoli Cheese Stuffed Chicken breasts (serves 12)
6 large boneless, skinless, chicken breasts, cut in half
Salt & Pepper
3 teaspoons garlic powder, divided
½ teaspoon paprika
1 16oz. bag frozen broccoli florets, thawed and finely chopped
1 cup finely diced red bell pepper
2 cups shredded cheddar cheese
½ cup mayonnaise, more if needed
Season both sides of the chicken breasts with salt, pepper, paprika and 1 teaspoon garlic powder. Use a sharp knife to cut a slice through the top of the chicken breasts, but not all the way through, creating a pocket for the filling.
For filing, in a medium size bowl, add chopped broccoli, bell pepper, cheese, mayo, remaining garlic powder and salt and pepper to taste. Mix until combined, then, divide the mixture between the chicken breasts, using a toothpick to secure if necessary.
Preheat oven to 350-degrees f. Spray a 9 x 13-inch baking dish with cooking spray and place stuffed chicken breasts in dish. Cover with foil and bake in preheated oven 40-45 minutes, or until an instant read thermometer reads 165-degrees. Let rest, covered for 5 minutes before serving.
