Boneless Pork Rib Sandwiches

Slow Cooker Boneless Pork Rib Sandwiches

For Ribs:

4 racks pork back ribs, cut into 3-4 rib sections to fit in your slow cooker

1 teaspoon salt

½ teaspoon pepper 

For Sauce:

2 cups ketchup

½ cup water

½ cup apple cider vinegar

4 tablespoons light brown sugar

3 tablespoons yellow mustard

3 tablespoons onion powder

3 tablespoons garlic powder

2 tablespoons liquid smoke

3 teaspoons cayenne pepper

2 teaspoons sweet paprika 

For Assembly:

Hoagie rolls or similar bun

Unsalted butter

Pickle slices

Diced yellow onion 

Put ribs in the slow cooker and top with salt and pepper.  Cook on low 7 hours.  About 1 hour before ribs are done, mix together your sauce.  Add all sauce ingredients into a large saucepan and cook on low 15-18 minutes or until sauce is thickened enough to coat a spoon and leave a line when you swipe a finger across the spoon. 

When ribs are done, remove from the slow cooker and put them on a sheet pan.  Let cool.  Gently remove bones and discard.  Slather ribs sections with  barbeque sauce.  Heat oven broiler to high and broil for 1-2 minutes on the top shelf of your oven.  Spread butter on the roll and toast.  Place the rib meat on a toasted bun and top with 3 pickles and some chopped onion.  Serve.
