Baked Salmon

2 lbs. salmon filet
Juice of 2 lemons
2 cloves garlic, minced
½ tsp. salt
½ tsp. pepper
½ cup soy sauce
1/3 cup brown sugar
½ cup water
1/3 cup vegetable oil

In a small bowl, mix together the lemon juice, minced garlic, salt, pepper, soy sauce, brown sugar, water and vegetable oil until sugar is dissolved. Place fish in a large resealable plastic bag and add the soy sauce marinade, seal, and turn to coat. Refrigerate 3-4 hours (or longer), turning once.

Preheat oven to 425 degrees. Remove salmon filets from plastic bag, and, wrap in aluminum foil, leaving a little room for air to circulate in bag. Before sealing, add a few teaspoons of leftover marinade from plastic bag. Place on a baking sheet and bake for 15-20 minutes. Remove from oven and serve.
