Baked Garlic Pork Tenderloin
¼ cup Olive oil, plus more for searing
1 teapoon Kosher salt
½ teaspoon pepper
2 cloves garlic, minced
1 tablespoons Italian seasoning
2 lb. pork tenderloins
In a large bowl, olive oil, salt, pepper, garlic and Italian seasoning. Mix well and then add your pork loins to the marinade, and, coat evenly. Cover with plastic wrap and refrigerate at least 6 hours. Rotate the loins a couple of times during marinating process.
When your ready to bake the tenderloins, preheat oven to 350-degrees F. Spray a 9 x 13-inch baking dish with cooking spray. In a large pan or skillet, over medium-high heat, heat a couple of tablespoons olive oil until shimmery. Add tenderloins, one at a time, to pan, and cook on all sides until browned. Remove tenderloin and add to baking dish. Repeat with the other tenderloin. Place in oven, then bake 25-30 minutes, or until pork has an internal temperature of 145-150-degrees F. When pork has come to temperature, remove and let rest for at least 5 minutes to lock in juices. Slice against grain and serve.
