Baked Chicken Fajita Burritos
2 ½ lbs. pre-cooked frozen chicken fajita strips
1 bag frozen fajita vegetables (bell peppers and onions)
2 cups shredded Pepper Jack or Colby/Jack cheese or both
1 package Taco seasoning mix
1/4 cup chicken broth or water
½ teaspoon garlic powder
½ teaspoon onion powder
1/2 teaspoon pepper
1/4 teaspoon cayenne powder
10-12 fresh flour tortillas
Vegetable Oil, for cooking
Heat a skillet over medium-high heat. Add a couple tablespoon vegetable oil and heat. Once hot, add frozen peppers and onions and cook until softened.
Add in the chicken fajita strips, taco seasoning mix, chicken broth or water, garlic powder, onion powder, pepper and cayenne powder. Mix well and heat through, stirring occasionally.
In a large skillet, heat tortillas until pliable. Divide the chicken and pepper mixture evenly among the 10 tortillas and top each with some of the shredded cheese. Fold up burritos, making sure to enclose the mixture inside. Spray a large baking sheet with cooking spray. Lay burritos seam side down on the baking sheet, and, spray tops of burrito’s with a little cooking spray (this will help them brown up a bit). Heat oven to 400-degrees F. Bake burrito’s 10-15 minutes or until the burritos are golden brown and crisp. Remove from oven and top with your favorite toppings, sour cream, shredded lettuce, salsa, guacamole, etc.
