Slow Cooker 15 Bean soup with Smoked Ham Shanks

1 (20 oz.) pkg. 15 bean soup mix (toss out the flavor packet)

2 medium yellow onions, chopped

2-3 carrots, chopped

2-3 ribs of celery, chopped

3 bay leafs

1 tsp. dried Italian seasoning

3 cloves garlic, minced

3-4 smoked ham shanks

6 cups chicken stock

2 cups water

1 (14.5 oz.) can diced tomatoes, with juice

1 tsp. pepper

 

Pick over and rinse beans.  Soak overnight in a large bowl with 8 cups of water. 

Discard water, rinse and drain.  

To a large (5 quart or larger) slow cooker, add all ingredients.  Stir.  Cover and cook on low 8 hours, or high 4 hours.  Carefully remove ham shanks from slow cooker to a bowl.  Once cooled, remove meat from bone and shred.  Return the meat to the slow cooker and stir.  Let warm for 30 minutes and serve.
