Nacho Cheese Doritos Taco Bake

 

1 (9.75 oz.) bag of Nacho Cheese Doritos, coarsely crushed

1 ½ lb. lean ground beef

1 package taco seasoning mix

2/3 cup beef broth or water

2 cups salsa

½ cup taco sauce

1 (4 oz.) can diced green chilies

1 (11 oz.) can Mexican corn, drained

2 cups shredded cheddar cheese

Shredded lettuce (garnish)

Sour cream (garnish)

1 (15 oz.) can diced tomatoes (garnish) 

Heat oven to 350-degrees F.  Spray a 9 x 13-inch baking dish with cooking spray and set aside. 

In a large skillet, cook beef over medium-high heat until no longer pink.  Drain.  Stir in taco seasoning and beef broth.  Simmer, stirring frequently, about 5-6 minutes.  Stir in salsa, taco sauce, diced green chilies and corn.  Cook, stirring frequently, until thickened, about 8-10 minutes.

 Place half the crushed Doritos in the bottom of baking dish.  Top with half the cheese.  Spread beef mixture on top. 

Bake, uncovered, for about 25-30 minutes.  Remove from oven and sprinkle the top of the casserole with the remaining cheese.  Return to oven and bake for another 5 minutes, or until cheese is melted.  Remove from oven.  Let rest 5 minutes.  Then serve, topped with some more crushed Doritos, and garnishments, if using.
