Italian Beef Sandwiches

Italian Beef Sandwiches

Roast beef:

5-6 lbs. Beef Chuck roast, room temperature

1 tablespoon salt

2 teaspoons pepper

2 teaspoon garlic powder

1 tablespoon Italian seasoning

3 tablespoons olive oil


For Au Jus:

8 cups beef stock or broth

2 tablespoons dried parsley

1 jar Hot Joey’s Pepperoncini peppers, drained

1 cup Hot Joey’s Giardiniera, drained

2 teaspoons garlic powder

1 bay leaf

1 tablespoon Worcestershire sauce

2 teaspoons dried oregano

1 teaspoon crushed red pepper flakes

2 teaspoons salt

1 ½ teaspoons pepper

In a bowl, mix together the rub ingredients for the beef. Spread 1 tablespoon olive oil over beef and then rub with beef seasonings.  Heat a large skillet over medium-high heat, then add 2 tablespoon olive oil to pan, heat and add beef.  Brown on all sides.  While beef is browning, in a large slow cooker, add all of the Au Jus ingredients and stir.  Add beef to slow cooker.  Cook on low 7-8 hours.  Remove beef and shred.  Return beef to slow cooker and stir. 


Serve on Jr. Vienna buns
