Smoked Sausage Alfredo Bake

Smoked Sausage Alfredo Bake 

3 tablespoons butter or margarine

2 tablespoons minced garlic

2 tablespoons flour

1 cup chicken broth or stock

1 teaspoon salt

1 teaspoon pepper

¼ teaspoon cayenne pepper (optional)

¼ teaspoon red pepper flakes (optional)

2 cups shredded mozzarella cheese, divided

½ cup grated parmesan cheese

1 lb. smoked sausage, cut into bite-size pieces

3 tablespoon dried parsley

1 lb. cooked pasta (penne would be best)

 

In a large skillet, melt butter and whisk in minced garlic.  Cook 1-2 minutes.  Whisk in flour and cook 1-2 minutes.  Whisk in chicken broth or stock, salt and pepper.  Cook and stir until mixture thickens.  Add cayenne pepper, red pepper, 1 cup mozzarella cheese and parmesan cheese.  Stir well.  Add sausage and parsley.  Stir.  Mix in pasta.  Top with the remaining mozzarella cheese and broil for 2-3 minutes on High.  Remove from oven and serve.
