Slow Cooker Barbacoa

Slow Cooker Barbacoa 

3 lb. chuck roast, cut into chunks

1 small onion, chopped

4 cloves minced garlic

1 can green chilies

2 chipotles in adobo sauce

2 tablespoons apple cider vinegar

½ cup beef stock

2 teaspoons salt

1 tablespoon cumin

1 tablespoon oregano

3 bay leaves

¼ teaspoon cloves

¼ cup lime juice

8-10 flour tortillas

Crumbled Feta Cheese (optional)

Fresh Cilantro (optional) 

Add all ingredients, except lime juice, to a 5 quart slow cooker.  Cover with lid and cook for 8 hours on low.  Once meat is tender, stir in lime juice and shred meat.  Serve on tortillas. (Garnish with crumbled Feta cheese and a little fresh Cilantro).
