Slow Cooker Apple Cinnamon Pork Loin 

4-5 lb. pork loin

1 or 2 apples, cored and cut into thin slices

1 medium onion, sliced

¼ cup honey

1 teaspoon cinnamon

1 teaspoon salt

¼ teaspoon pepper

½ teaspoon dried thyme  

In a large slow cooker, spray the bottom with cooking spray.  Cut several slices in the top of the pork loin, without cutting all the way through.  Stuff slices in pork line with apples.  Add sliced onions, honey, drizzle with honey and sprinkle with salt, pepper and thyme or Italian seasoning.  Cover and cook on low 6-8 hours, or until internal temperature of pork reaches 145-degrees F.  Remove pork from slow cooker and thinly slice across the bias.  Serve with some of the apples and onions on each plate.
