Mexican Doritos Casserole

1 large bag Nacho Cheese Doritos
1 lb. ground beef, cooked and drained
1 lb. Chorizo sausage, cooked and drained
3-4 cups shredded Cheddar cheese
1 medium onion, chopped
1 can light red kidney beans, rinsed and drained
1 can chili hot beans
1 can cream of chicken soup
2 cans diced tomatoes with green chilies (Rotel)
1 tablespoon paprika
2 tablespoons chili powder
Sour cream for serving (optional)

In a large pot, mix cooked ground beef, chorizo, chili beans, kidney beans, cream of chicken soup, tomatoes with green chilies, onions, paprika, and chili powder. Cover and simmer for 60 minutes.

Coat a 9 x 13-inch baking dish with cooking spray. Break up the Doritos (don’t over crush them!) and spread 1/3 of the bag over the bottom of baking dish. Sprinkle with 1 cup cheese. Cover with ½ of the beef and sausage mixture. Top with another 1/3 of the Doritos and 1 more cup of cheese. Add remaining beef and sausage mixture and cover with remaining Doritos and the remaining cheese.

Bake, uncovered, at 350-degrees for 30 minutes. Remove from oven and let cook slightly and cut into lasagna sized servings. Top with sour cream if using.
