Marinated Grilled Chicken, Bacon, Swiss Sandwich

Marinated Grilled Chicken, Bacon, Swiss Sandwich 

For Chicken Marinade:

¾ cup Olive Oil

¾ cup Balsamic vinegar

1/3 cup soy sauce

1/3 cup Worcestershire sauce

¼ cup lemon juice

1 cup brown sugar

1 teaspoon dried rosemary

2 ¼ tablespoons Dijon or spicy brown mustard (Martha’s Spicy Mustard)

1 tablespoon chili powder

1 teaspoon pepper

2 teaspoons salt

2 ½ teaspoon garlic powder 

Other ingredients:

12-14 frozen boneless, skinless chicken breasts (thawed)

Cottage bacon slices

Sliced Swiss cheese

Mayonnaise for serving

Sandwich buns for serving


Combine all marinade ingredients in a large mixing bowl and whisk together.  Remove ½ cup marinade and reserve for basting the chicken later.  Poke each chicken breast with a fork several times.  Place chicken in a large, Ziploc bag and pour marinade over the top.  Close tightly.  Marinated at least 4 hours, and up to 24 hours.

To grill:

Preheat grill to medium-high heat and lightly grease the grates.  Remove chicken from marinade, letting the excess drip off.  Grill chicken for 3-4 minutes per side, or until cooked through, basting chicken occasionally through cooking time, if needed.  During the last minute or two of grilling time, top each chicken breast with a slice of Swiss cheese.  Remove chicken from grill and tent with foil.  Allow chicken to rest at least 5 minutes.  Reduce grill heat to low.  While chicken is resting, place slices of cottage bacon on grill and grill 1 minute per side, just until heated through.  Grill buns if desired.  

Put some mayo on buns, top with chicken breast with cheese and a slice of cottage bacon.  Serve.
