Crustless Quiche

1 pkg. Polish Kielbasa
8 eggs, lightly beaten
1½ cups heavy whipping cream
1½ tsp. dry mustard
¼ tsp. salt
¼ tsp. ground black pepper
2 cups shredded cheddar cheese, divided
1 green or red bell pepper (or a combination on ½ green & ½ red), chopped

Preheat oven to 350-degrees. Cut sausage into ½-inch cubes; set aside. Place eggs, cream, dry mustard, salt and pepper in a large bowl, whisk until smooth.

Stir in sausage, 1½ cups cheese and green pepper. Pour egg mixture into a lightly greased 13 x 9-inch baking dish.

Bake 40-45 minutes, or until eggs are set. Sprinkle with remaining ½ cup cheese. Let stand 5 minutes before serving.
