Seafood Lasagna Roll-Ups


2 pkgs. (8 oz each) imitation Crabmeat, chopped or flaked
2 cups 1% Cottage Cheese, drained
1 cup Low Fat Ricotta Cheese
1 cup Low Fat Mozzarella Cheese
2/3 cup dry bread crumbs
½ cup Parmesan cheese, grated, (plus more for serving)
2 eggs, lightly beaten
1 cup egg substitute
2 tablespoons dried parsley flakes
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon ground pepper
¼ teaspoon salt
12 lasagna noodles, cooked and drained
3 cups meatless spaghetti sauce, divided


In a bowl, combine the crab, cottage cheese, ricotta cheese, mozzarella cheese, bread crumbs, parmesan cheese, egg, egg substitute, parsley, onion powder, pepper, salt and garlic powder. Spread 1/3 cup on each noodle; roll up tightly. Spread ½ cup spaghettis sauce in bottom of 9 x 13 inch baking dish, which has been sprayed with cooking spray. Place roll-ups, seam side down, in dish. Top with remaining sauce. Cover and bake at 350-degrees for 40 minutes. Uncover; bake 40 minutes longer. Let rest 5 minutes before serving. Sprinkle with Parmesan cheese.
