Grande Guacamole Salsa Burgers

Guacamole Salsa:
1 large avocado, pit removed (scoop avocado into blender)
1 small onion, quartered
2 teaspoons fresh lemon juice (about ½ lemon, squeezed)
1 teaspoon Worcestershire sauce
½ teaspoon hot sauce
¼ teaspoon salt
1 small diced seeded tomato
½ cup salsa (mild, medium or hot)
¼ cup sour cream

2-2 ½ pounds 85% lean ground beef
1 teaspoon ground cumin
1 teaspoon salt
½ teaspoon pepper
1 (4 oz.) can diced green chilies, drained
Sliced Monterey Jack cheese
2 tablespoons butter, softened (for grilling buns)
8 sesame seed buns or Kaiser rolls, split

Garnish with:
shredded lettuce
sliced black olives
1 small tomato, chopped
sour cream


For Guacamole: Place all ingredients in blender and process until well blended. Cover; refrigerate until ready to serve.

For Burger: Combine ground beef, cumin and salt and pepper. Mix lightly until thoroughly blended. Shape into 12 thin burger size patties. Place on lightly greased baking sheet or wax paper. Sprinkle green chilies evenly over six of the patties; arrange cheese slices over chilies. Top each patty with one of the other patties and press edges together securely to seal. Grill over medium heat for about 7-8 minutes. Turn and grill another 6-7 minutes or until cook through. Remove from heat and let rest 5 minutes.

Spread softened butter on top and bottom of each bun and grill about 1 minute or until golden brown.

Place burger on bun and top with Guacamole salsa, then shredded lettuce, chopped tomato, black olives and sour cream. Enjoy!
