BBQ Beef & Bean Casserole


1 pound lean ground beef
1 medium sweet onion, chopped
6 slices bacon, fat trimmed and chopped
½ cup pack brown sugar
½ cup ketchup
1 tablespoon yellow mustard
1 tablespoon white vinegar
1 (16 oz.) can baked beans
1 (14/12 oz.) can yellow wax beans, drained
1 (14 ½ oz.) can green beans, drained
1 (14 ½ oz.) can Great Northern White beans, rinsed and drained
1 cup crushed corn chips
2 cups shredded cheese, (American, cheddar, or blend there of)
salt & pepper for seasoning


Heat oven to 375-degrees. Spray a 9 x 13" pan with cooking spray. Crumble ground beef in large skillet. Season with salt and pepper. Add onion and bacon and cook over medium heat, stirring occasionally, until the ground beef is browned. Drain off fat, if there is any. In a large bowl, stir together ground beef mixture and all the remaining ingredients, except chips and cheese. Pour mixture into your pan and bake 40-50 minutes or until heated through and bubbly around edges. Remove from oven and sprinkle with corn chips and then top with shredded cheese. Bake another 5-8 minutes, or until cheese is melted. Remove and let rest 5 minutes. Serve.
