Tortellini Alfredo (7/20/2007)

Tortellini Alfredo


2 pkgs. Frozen cheese tortellini
½ medium onion, chopped
6 tablespoons butter or margarine
½ small bag frozen peas, thawed
8 oz. Fresh sliced mushrooms
1 small jar roasted sweet red pepper, thinly sliced lengthwise
1 cup cubed fully cooked ham
1 pint heavy whipping cream
½ teaspoon fresh ground black pepper
¾ cup grated Parmesan cheese
Shredded Parmesan cheese


Cook tortellini according to package directions (note..Tortellini is done when they begin to float). Meanwhile, in a large skillet, sauté the onion in butter until tender. Add sweet peppers, mushrooms, peas and ham; cook until mushrooms are tender. Stir in the cream and black pepper; heat through. Stir in grated Parmesan cheese until melted. Stir constantly until sauce begins to thicken, about 4-5 minutes.

Drain tortellini and place on serving dish or bowl. Top with the sauce and toss to coat. Sprinkle with shredded Parmesan cheese if desired.

Serve with Garlic bread or Garlic bread sticks and side salad.
