Slow cooker Meatballs (4/13/2007)

Slow Cooker Meatballs

Meatball Ingredients:

1 lb. Lean Ground beef
1 teaspoon Oregano
1 tablespoon minced garlic
½ teaspoon salt
½ teaspoon pepper
¼ cup freshly chopped parsley
½ cup grated parmesan cheese
½ cup Italian seasoned bread crumbs
1 egg, beaten

Spaghetti Sauce:

1 26 oz. Jar spaghetti sauce
1 15 oz. Can Italian diced tomatoes
1 15 oz. Can tomato sauce
1 6oz. Can tomato paste (Italian style)
1 teaspoon basil
1 teaspoon oregano
1 teaspoon thyme
½ teaspoon salt
2 tablespoons olive oil
1 tablespoon minced garlic
1 medium yellow onion, chopped
1 8 oz. Package freshly sliced mushrooms

Directions for Meatballs:

Mix all ingredients together in large bowl. Shape into palm sized meatballs. Should make about nine. Depending on how large you like your meatballs.

Directions for Sauce:

Add olive oil to sauce pan. Heat to medium. Sauté mushroom, chopped onion and garlic until onion in translucent. Pour all ingredients in a large slow cooker or crockpot. Add meatballs and cook on low 6-8 hours, depending on how hot your crockpot cooks. Serve with your favorite spaghetti or pasta.
